Widely used in Asia the mango has spread its influence to dishes found in Thailand, Cambodia and into Middle Eastern cuisine. This fusing together of flavors and ingredients is one of the influences behind the Green Mango Kitchen. Curries from Goa and Southern India, Kofka and Cinnamon Minced Lamb from Palestine, Malaysian Satay to Moo Ping and Nam Jim Jaew in Thailand, are all regular guests to the menu, brought to the streets, private functions and events across the South West.
